Ingredients:

  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature

For the Salted Caramel Sauce:

  • 200 grams granulated white sugar
  • 50 grams warm water
  • 150 grams heavy cream
  • 60 grams unsalted butter, room temperature
  • 1 tsp vanilla extract
  • 1 generous tsp (4 grams) kosher salt

For Decoration:

  • Additional Snickers, chopped
  • Salted Peanuts, Chocolate Sauce, Chocolate Chips (optional)

Instructions:

  1. Oreo Crust: Preheat oven to 325°F. Line an 8.5 x 4.5-inch loaf pan with parchment paper. Process Oreos until fine, add melted butter, and pulse until combined. Spread in pan, bake for 12 minutes, and cool. Reduce oven temperature to 300°F.
  2. Brown Sugar Cheesecake Filling: Beat cream cheese and brown sugar until fluffy. Add sour cream, vanilla, eggs, and egg yolk, mixing just until combined. Fold together with a spatula.
  3. Assemble Cheesecake: Sprinkle prebaked crust with chopped Snickers, add cheesecake batter. Bake at 300°F for 24-26 minutes until edges are set but center is slightly jiggly. Cool in oven for 30-45 minutes, then cool completely at room temperature before refrigerating.
