Cheesecake:

  • 400g cream cheese
  • 90g mascarpone
  • 120g sugar
  • 6g cornstarch
  • 100g eggs
  • 90g cream (33-35%)
  • 20g espresso

Chocolate Layer:

  • 60g milk chocolate
  • 80g cream (33-35%)
  • 2g instant coffee

Chantilly Cream:

  • 40g cream A (33-35%)
  • 10g sugar
  • 50g mascarpone
  • 55g cream B (33-35%)
  • 2g powdered gelatin (200 bloom)
  • 10g cold water

Instructions:

  1. Prepare Cheesecake: Mix cream cheese, mascarpone, sugar, and cornstarch. Add eggs, then espresso and cream. Pour into crust, bake at 100-110°C for 2hrs. Cool in oven, then refrigerate.
  2. Make Chocolate Layer: Heat cream and coffee, pour over chocolate. Blend until smooth, pour over cheesecake, refrigerate.
  3. Prepare Chantilly Cream: Swell gelatin, heat cream A and sugar. Mix mascarpone, creams, add gelatin. Chill, then whip. Apply over chocolate layer.
  4. Decorate: Use a pastry nozzle for the cream, dust with cocoa powder, refrigerate for 30min.
