Recipe:

Cake:

  • 4 eggs
  • Just over 1/2 cup sugar (100g)
  • 75ml warm water
  • Just under 1 cup flour (80g)
  • 2 tbsp cornstarch (20g)
  • 1 packet baking powder
  • 1 packet vanilla
  • 3 level tbsp cocoa (30g)

Cream Filling:

  • 500ml milk
  • Slightly less than 1/2 cup sugar (75g)
  • 1 egg
  • 1/2 cup cornstarch (50g)
  • 1 heaping tbsp flour (25g)
  • 1 packet vanilla
  • 60g butter
  • 100g white chocolate
  • 12 small bananas

Chocolate Topping:

  • 450g milk chocolate
  • 1/4 cup vegetable oil
  • Just under 1 cup crushed nuts

Instructions:

  1. Bake Cake: Mix dry ingredients, beat egg whites with half the sugar, and yolks with the rest. Add water and dry mix to yolks. Fold in egg whites and bake at 175°C.
  2. Make Cream: Cook sugar, egg, cornstarch, flour, and milk until thick. Add butter, chocolate, and vanilla. Cool, stirring occasionally.
  3. Assemble: Slice cake, pipe cream on each, top with banana shaped into ‘C’, and coat with cream. Chill for 30 minutes.
  4. Top: Melt chocolate, mix with oil and nuts, and pour over cakes.
