  • 330g all-purpose flour
  • 1 1/2 tbsp cornstarch
  • 1 1/2 tsp baking powder

  • 220g sugar + 2 tbsp granulated sugar for rolling
  • 1 egg
  • 1 tsp vanilla extract
  • 40ml milk
  • 4 tbsp strawberry jam
  • Red food coloring (optional, 6-8 drops)

Instructions

  1. Strawberry Jam: Cook strawberries and 30g sugar over medium heat for about 10 minutes. Mash and strain to remove seeds. Set aside.
  2. Cream butter and sugar until light and fluffy. Add egg, milk, vanilla, and jam. Mix well.
  3. Sift in flour, cornstarch, salt, and baking powder. Mix until just combined. Add food coloring if desired.
  4. Chill dough for at least 2h30 in the fridge. It’s crucial for preventing cookies from spreading too much.
  5. With chilled dough, form cookies using a scoop (about 70g each, yielding 12 cookies). Roll in granulated sugar and place on a baking sheet lined with parchment paper, leaving space between each.
