Delicious Cheese Blintzes

Ingredients:

For the Blintz Batter:

  • 4 eggs
  • 1 1/2 cups milk
  • 1 cup water
  • 3 tablespoons sugar
  • 1 1/2 cups flour

For the Cheese Filling:

  • 225 grams 25% fat cream cheese
  • 250 grams 5% fat white cheese
  • 250 ml 38% fat whipping cream
  • 1/3 cup sugar
  • 2 tablespoons vanilla pudding mix
  • Vanilla extract or paste

Instructions:

  1. Preparing the Cheese Filling:
    • In a bowl, combine cream cheese, white cheese, whipping cream, sugar, vanilla pudding mix, and vanilla. Use a hand mixer to blend until you get a stable cream.
  2. Making the Blintzes:
    • In another bowl, whisk together eggs, milk, water, and sugar.
    • Gradually add flour to the egg mixture, stirring continuously to form a smooth batter.
    • Lightly oil a pan and pour in enough batter to make a thin layer. Cook for about 40 seconds on each side and flip. Remove and let cool.
  3. Assembling the Blintzes:
    • Once the blintzes have cooled, use a piping bag to fill them with the cheese mixture.
    • Roll each blintz tightly.
  4. Serving:
    • Serve the blintzes dusted with powdered sugar, drizzled with maple syrup, and accompanied by berries.
