Ingredients:

  • 325g self-rising flour
  • 50g vegan vanilla protein powder (or substitute with extra flour)
  • 1/2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 150g sugar
  • 300ml dairy-free milk mixed with 1 tbsp apple cider vinegar
  • 50ml brewed coffee
  • 90g dairy-free yogurt
  • 3 bananas, mashed
  • 100g walnuts, crushed
  • Coffee Glaze:
    • 80g powdered sugar
    • 2 tbsp maple syrup
    • 1 tbsp melted vegan butter
    • 1-2 tsp brewed coffee
    • 1 tsp instant coffee

Method:

  1. Preheat the oven to 170°C and grease a 2lb loaf tin.
  2. Mix dairy-free milk with vinegar and set aside to thicken.
  3. Sift dry ingredients into a bowl.
  4. In another bowl, mix the wet ingredients.
  5. Combine the wet and dry ingredients, mixing gently until just combined.
  6. Stir in the mashed bananas and walnuts.
