Ingredients:

Crust:

  • 250g ground cookies
  • 100g ground roasted hazelnuts
  • 2 tbsp powdered sugar
  • 125g butter
  • 150ml milk

Filling:

  • 500g mascarpone cheese (or any unsalted cream cheese)
  • 50g powdered sugar
  • 1 tbsp vanilla extract
  • 250ml whipping cream
  • 2 sachets of cream stabilizer (kremfix)

Caramel Topping:

  • 200g caramel hazelnut candies
  • 50ml whipping cream
  • Hazelnut pieces for decoration

Instructions:

  1. For the crust, mix all the ingredients and press into a 20-24cm diameter springform pan. Refrigerate.
  2. For the filling, briefly whip the mascarpone cheese, powdered sugar, and vanilla with a mixer. In another bowl, semi-whip the cream with the cream stabilizer, then fold it into the mascarpone mixture. Spread this over the crust and refrigerate for at least 3 hours, preferably overnight.
  3. For the topping, melt the caramel candies (in the microwave or on the stove), then mix in the whipping cream until smooth. Let this cool completely at room temperature, ideally overnight. Only then pour it over the cheesecake.
  4. To serve, remove the cheesecake from the pan, optionally cut into slices, drizzle with the caramel topping, and decorate with hazelnut pieces.
