  2. Cook sugar, 75g water, and glucose syrup until boiling. Remove from heat and dissolve the soaked gelatin in it.
  3. In a pitcher, combine white chocolate and sweetened condensed milk. Pour the syrup over it.
  4. Blend everything together with an immersion blender until smooth and well combined.
  5. The glaze works best at 28-32°C (82.4-89.6°F).
  6. Use granulated gelatin and 43% glucose syrup.
  7. For coloring, use water-soluble food colors.
  8. The glaze can be stored in the refrigerator for up to 14 days.
