Exotic Mango Tartlets

Ingredients for 7-8 Tartlets (8 cm diameter):

For the Tart Crust:

  • 2 cups all-purpose flour
  • 1/2 cup plus 2 tablespoons cold butter, cubed
  • 1/3 cup powdered sugar
  • 1 cold egg
  • A pinch of salt
  • 2 tablespoons ice-cold water
  • 1 teaspoon vanilla extract

For the Filling:

  • 1/2 cup mascarpone cheese
  • 1/2 cup ricotta cheese
  • A little less than 1/2 cup cream
  • 1/2 ripe mango, pureed
  • 1 heaping tablespoon powdered sugar
  • Juice of 1/2 lemon

For Decoration:

  • 2 large ripe mangoes

Instructions:

  1. Make the tart crust by kneading flour, butter, powdered sugar, egg, salt, water, and vanilla extract into a smooth dough. Chill for 1-2 hours.
  2. Prepare the filling by whipping mascarpone, ricotta, and cream until smooth. Mix in the mango puree, powdered sugar, and lemon juice until creamy. Refrigerate.
  3. Preheat the oven to 160°C (320°F). Roll out the chilled dough and press into tartlet molds.
  4. Blind bake with parchment paper and pie weights for 20-25 minutes until the crust is golden. Remove weights and paper, and let the crusts cool.
  5. Fill the cooled tartlet shells with the mango filling, smoothing the tops.
  6. For the decoration, peel and thinly slice the mangoes. Shape the slices into roses and place atop each tartlet.
