Ingredients:
For the Cake:
- 150g eggs
- 210g sugar
- 200g flour
- 95g cream
- 60g butter, melted
- 20g milk
- 40g chopped nuts (walnuts recommended)
- 4g baking powder
- Orange zest
- Mixed spices (cinnamon, ginger, nutmeg)
- A pinch of salt
- 40g each of five types of dried fruits (light and dark raisins, dried cherries, apricots, candied orange peel), soaked in alcohol (like rum) overnight
For the Syrup:
- 150g orange juice
- 80g sugar
- 50g water
Optional:
- Neutral glaze for coating
- Additional decorations as desired
Instructions:
- Whisk eggs, sugar, and a pinch of salt until light, fluffy, and pale, not too stiff. Add all liquid ingredients, then dry ingredients, and mix until combined. Stir in melted butter. Refrigerate the batter overnight.
- The next morning, add the drained dried fruits and chopped nuts to the batter. Divide the mixture into two loaf pans (25.5 x 6.5 cm), lined with parchment paper and greased with butter. For a neat split on top, pipe a soft line of butter down the middle of each loaf.
- Bake at 160°C for 40-60 minutes until golden and a skewer inserted comes out clean.
- For the syrup, mix orange juice, sugar, and water. Bring to a boil and then cool. Brush the warm cakes with this syrup and then refrigerate for cooling.
- Optionally, cover with a neutral glaze and decorate to your liking. The cake can be frozen or stored at room temperature in an airtight container for 1-2 weeks.
Enjoy this marvelous Spiced Fruit and Nut Loaf Cake, a true delight for your taste buds!
