Festive Confetti Sugar Cookies

Cookie Ingredients:

  • 1 cup butter with salt, softened
  • 1½ cups fine sugar
  • 1 egg, brought to ambient temperature
  • 2 teaspoons extract of vanilla
  • ½ teaspoon extract of almond
  • ½ teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • ½ teaspoon fine salt
  • 2¾ cups flour for all purposes
  • ½ cup rainbow sprinkle jimmies
  • ¼ cup sugar (for coating the cookies)

Baking Directions:

  1. Warm your oven to 375°F (190°C). Prepare your baking trays with parchment.
  2. In a mixing bowl, sift together the flour, baking powder, bicarbonate of soda, and salt.
  3. Whip the butter and sugar in a mixer until it turns pale and fluffy, which should take about 3 minutes.
  4. Beat in the egg, vanilla, and almond extracts until the mixture is smooth, which will take about half a minute.
  5. Carefully combine in the dry mix, stopping short of overmixing - a few flour streaks can remain. Gently fold in the rainbow sprinkles.
  6. For each cookie, scoop out a generous amount of dough using a large cookie scoop, roll it into a ball, coat it with sugar, and if you're feeling extra festive, press in a few more sprinkles on top.
  7. Space the cookies out on your baking sheets and bake until the edges turn a light golden color and the tops show slight cracking, usually within 10-13 minutes. Watch carefully to maintain that coveted chewiness.

Additional Tips:

  • Rainbow jimmies are ideal for baking; they won't bleed their colors into the dough.
  • For measurement accuracy, grams are the gold standard, particularly for flour. No scale? No problem. The spoon-and-level method will be your best friend to keep the flour airy and prevent dense cookies.
