Cookie Ingredients:
- 1 cup butter with salt, softened
- 1½ cups fine sugar

- ½ teaspoon extract of almond
- ½ teaspoon baking powder
- 1 teaspoon bicarbonate of soda
- ½ teaspoon fine salt
- 2¾ cups flour for all purposes
- ½ cup rainbow sprinkle jimmies
- ¼ cup sugar (for coating the cookies)
Baking Directions:
- Warm your oven to 375°F (190°C). Prepare your baking trays with parchment.
- In a mixing bowl, sift together the flour, baking powder, bicarbonate of soda, and salt.
- Whip the butter and sugar in a mixer until it turns pale and fluffy, which should take about 3 minutes.
- Beat in the egg, vanilla, and almond extracts until the mixture is smooth, which will take about half a minute.
- Carefully combine in the dry mix, stopping short of overmixing - a few flour streaks can remain. Gently fold in the rainbow sprinkles.
- For each cookie, scoop out a generous amount of dough using a large cookie scoop, roll it into a ball, coat it with sugar, and if you're feeling extra festive, press in a few more sprinkles on top.
- Space the cookies out on your baking sheets and bake until the edges turn a light golden color and the tops show slight cracking, usually within 10-13 minutes. Watch carefully to maintain that coveted chewiness.

- Rainbow jimmies are ideal for baking; they won't bleed their colors into the dough.
