Ingredients

For the Shortcrust Pastry:

  • 500g all-purpose flour
  • 200g sugar
  • 200g butter
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 sachet vanilla sugar

For the Frangipane Cream:

  • 100g butter
  • 100g sugar
  • 100g almond flour
  • 30g flour
  • 2 eggs
  • Almond extract
  • 1 teaspoon baking powder
  • Walnuts, as needed
  • Fig jam, as needed

Instructions

  1. Cream butter with sugar until it reaches a smooth consistency.
  2. Add eggs and continue mixing.
  3. Mix in flour and baking powder briefly, then form into a dough. Wrap in cling film and refrigerate.
  4. Roll out the pastry to 4mm thickness and line a 22-24cm buttered and floured tart tin.
  5. For the frangipane, cream butter and sugar until smooth. Gradually add eggs, then mix in flour, almond flour, almond extract, and baking powder.
  6. Spread a layer of fig jam over the pastry base, sprinkle with crumbled walnuts, then pour the frangipane cream over it.
  7. Gently spread another layer of fig jam on top.
  8. Bake at 180°C (356°F) for approximately 45-50 minutes.
