Ingredients:

  • 330g flour
  • 270g sugar
  • 8 organic eggs
  • 180g mandarin juice
  • 130g seed oil
  • 16g baking powder
  • 8g cream of tartar
  • 2 tablespoons rose water (optional)

Note: For a 26 cm chiffon cake mold.

Instructions:

  1. Sift together flour, sugar, and baking powder.
  2. Make a well and add egg yolks, emulsified mandarin juice with oil, and rose water. Mix well.
  3. Whip egg whites with cream of tartar and fold into the batter in two additions.
  4. Pour into an ungreased 26 cm chiffon cake mold and bake.
  5. Cool the cake upside down on a rack for a minimum of 3 hours.
