Ingredients:

For the Brownie:

  • 3/4 cup (170g) butter
  • 1 1/2 cups (280g) white granulated sugar
  • 2 eggs

  • 3 1/2 tbsp (45g) vegetable oil
  • 1 cup (120g) all-purpose flour
  • 1/2 tsp baking powder
  • 3/4 cup (90g) cocoa powder
  • 2 1/2 tsp (8g) espresso powder
  • 2 tsp (4g) vanilla extract
  • 1 tsp salt

For the Glaze:

  • 1 1/2 cups (185g) powdered sugar
  • 1/4 cup (30g) cocoa powder
  • 2-3 tbsp (30-40g) heavy cream

Instructions:

  1. Prepare the Brownie Batter:
    • Preheat your oven to 350°F (175°C).
    • Grease and line a 9x9 inch baking pan with parchment paper.
    • In a large mixing bowl, melt the butter. Add the white granulated sugar and whisk until well combined.
    • Add the eggs, egg yolk, and vegetable oil to the mixture, whisking until smooth.
    • Stir in the vanilla extract and espresso powder.
    • In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  2. Bake the Brownies:
    • Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
    • Bake in the preheated oven for 28-32 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

    • In a medium mixing bowl, sift together the powdered sugar and cocoa powder.
    • Gradually add the heavy cream, one tablespoon at a time, stirring until the glaze reaches your desired consistency.
