Gingerbread Scones with Maple Glaze

Ingredients:

For the Gingerbread Scones:

  • 2 cups (250 g) all-purpose flour
  • 1 Tbs baking powder
  • ¼ tsp salt
  • ¾ tsp ground ginger
  • ½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ cup (50 g) packed brown sugar, light or dark
  • 5 Tbs unsalted butter, cold and cut into ½-inch cubes
  • ¼ cup unsulphured molasses (not blackstrap)
  • ¾ cup (180 ml) cold heavy cream

For the Maple Glaze:

  • 1 cup (120 g) confectioners’ sugar, sifted
  • 1 Tbs pure maple syrup (avoid pancake syrup)
  • ½ tsp pure vanilla extract
  • 1 Tbs milk (or adjust for desired consistency)

Instructions:

  1. Preparation: Start by lining a large baking sheet with parchment paper.
  2. Combine Dry Ingredients: In a large bowl, whisk together flour, baking powder, salt, ginger, cinnamon, cloves, and brown sugar.
  3. Cut in Butter: Introduce the cold butter to the bowl. Use a pastry cutter or two forks to blend in the butter, continuing until the mix resembles small crumbs.
  4. Add Wet Ingredients: In a separate bowl or measuring cup, whisk the cold heavy cream and molasses. Pour this wet mixture into the flour mixture, and combine using a rubber spatula or wooden spoon, just until large clumps form.
  5. Shape & Cut: Transfer your dough onto a lightly floured work surface. Mold it into an 8-inch diameter disc. Using a sharp knife or bench scraper, slice the dough into 8 even triangles.
  6. Chill: Place the scone triangles onto your prepared baking sheet and pop them in the freezer for about 15 minutes.
  7. Bake: As the scones chill, preheat your oven to 425°F. Once your oven reaches temperature and the scones are chilled, bake them for 15-18 minutes. They should emerge a beautiful golden brown.
  8. Glaze: For the glaze, whisk the sifted confectioners’ sugar with maple syrup and vanilla in a bowl. Gradually add milk until you achieve your desired consistency.
