Gluten-Free Turtle Brownies

1 1/3 cups granulated sugar
1/3 cup brown sugar, packed
3 whole eggs, room temperature
1 egg yolk, room temperature
2 tbsp vegetable oil
1/2 tsp salt
1/2 cup chocolate, roughly crushed
1/4 cup caramel-filled chocolate candies
Extra pecans and salted caramel sauce for topping
Instructions:

Start by melting 1 cup of chocolate chips with the butter. Use a microwave in 30-second increments, stirring after each until smooth. Set aside to cool.

Preheat your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper for easy removal.

In a mixing bowl, whisk together the eggs, extra yolk, both sugars, salt, vegetable oil, and vanilla extract until well combined.

Sift in the cocoa powder and espresso powder, mixing until just combined.

Gently stir in the gluten-free flour until the batter is smooth and there are no dry spots.

Gradually fold in the cooled, melted chocolate mixture until just incorporated.

Stir in the 1/2 cup of chocolate chips and the crushed chocolate, mixing with a spatula until evenly distributed.

Pour the batter into the prepared pan, smoothing the top with the spatula.

Sprinkle the top with additional pecans and the caramel-filled chocolates.

Bake for 38-45 minutes, or until the edges set and a toothpick inserted into the center comes out mostly clean.

Let the brownies cool in the pan for about 90 minutes to set completely.

Drizzle with salted caramel sauce before serving for that classic turtle flavor.
