Ingredients

- 200g chocolate chips, plus 20g for topping
For the Caramel:
- 1 tin (397g) condensed milk
- 90g unsalted butter
- 100g light brown sugar
- 1 tbsp golden syrup
- 1 tsp salt
Instructions
- Preheat your oven to 180°C (160°C fan) and line an 8x8-inch baking tin with parchment paper.
- Start by creaming together the butter, light brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs and vanilla extract until well combined.
- Whisk together the flour, bicarbonate of soda, and salt, then gradually mix into the wet ingredients. Stir in 200g of chocolate chips.
- For the caramel, combine condensed milk, butter, light brown sugar, golden syrup, and salt in a saucepan. Cook over medium heat, stirring constantly, until the mixture thickens.
- Press half of the cookie dough into the prepared tin. Pour the caramel over the top, then dollop the remaining cookie dough on top. Don't worry if it doesn't cover completely; the caramel can peek through. Sprinkle with the remaining 20g of chocolate chips.
- Bake for 25 minutes or until the top is golden brown and crisp. The center will wobble due to the hot caramel.
- Allow the bars to cool completely in the tin before placing them in the refrigerator for a firmer cut.
