Praliné Insert Ingredients:

  • 180g praliné
  1. Spread the praliné in a small mold, smaller than your dome mold. Freeze for 30 minutes.

Praliné Ganache Ingredients:

  • 1 sheet of gelatin
  • 170g pralinoise (chocolate with praliné)
  • 30 cl heavy cream
  1. Soak the gelatin in cold water. Melt the pralinoise and heat 15cl of the cream.
  2. Mix the warmed cream with the squeezed-out gelatin. Then, add the remaining 15cl of cold cream.
  3. Cover with plastic wrap touching the surface and refrigerate overnight.

Feuillantine Crunch Ingredients:

  • 40g milk chocolate
  • 50g praliné
  • 5 feuillantine (crispy crepes)
  1. Layer this crunch over the frozen praliné insert.

Almond Dacquoise Ingredients:

  • 3 egg whites
  • 20g caster sugar
  • 70g icing sugar
  • 70g almond powder
  1. Bake at 180°C (356°F) for 12 minutes.

  • 60g pralin
