Recipe:

Ladyfingers:

  • 4 eggs
  • 85g sugar (about ½ cup)
  • 1 packet of vanilla sugar
  • A pinch of salt
  • 100g flour (slightly less than 1 cup)
  • 1 heaped tablespoon cornstarch (20g)

Cream:

  • 250g mascarpone or spreadable white cheese (cold)
  • 200g heavy cream (35% fat content, cold)
  • 2.5 heaped tablespoons powdered sugar
  • 3-4 drops vanilla extract

Sabayon:

  • 4 egg yolks
  • 50g sugar (about ¼ cup)

Syrup:

  • 1.5 cups room temperature espresso (or 3 tablespoons instant coffee dissolved in hot water)

Instructions:

  1. Preheat the oven to 175°C with fan setting. Whip egg yolks with 2 tablespoons sugar until pale. Whip egg whites with a pinch of salt to a frothy consistency, gradually adding the remaining sugar until stiff peaks form. Gently fold in yolks. Sift and incorporate the dry ingredients. Spread onto a parchment-lined tray and bake until golden. Aim for finger thickness.
  2. For the sabayon, whisk egg yolks and sugar in a heatproof bowl. Place over a pot of simmering water (ensure the bowl doesn’t touch the water). Whisk for 6-7 minutes until it thickens. Keep stirring to prevent curdling.
  3. For the cream, lightly whip mascarpone. Add heavy cream and powdered sugar, continuing to whip. Adjust sugar to taste and add vanilla extract. Whip until firm.
  4. If the sabayon is too thick, thin it with a bit of cold milk. Mix with the mascarpone cream, adjusting the consistency and taste as needed.
  5. Trim ladyfingers to fit your dish. Soak in coffee. Layer with cream (aim for three layers of each). Add chopped chocolate between layers. Wrap in gelatin and refrigerate for several hours. Pour over the sabayon and dust with cocoa powder.
