Homemade Apple Pie with Whiskey-Infused Crust

Embark on a culinary journey with our Homemade Apple Pie, complete with a whiskey-infused crust that brings a warm, complex flavor to this timeless classic. The apple filling, tender and fragrant, is spiced to perfection, nestled within a golden-brown crust that's just the right amount of flaky. It's a pie that beckons for a dollop of velvety vanilla ice cream on top, creating the perfect harmony of flavors and textures.

For the Whiskey-Infused Crust:

  • 1/2 cup cold water
  • 2 tablespoons whiskey or preferred spirit
  • 2 1/2 cups all-purpose flour
  • 1 cup cold salted butter
  • 1 large egg for egg wash
  • 1-2 tablespoons turbinado sugar for sprinkling

For the Spiced Apple Filling:

  • 10-12 large or 15-18 smaller-medium apples (about 5 lbs)
  • 1/4 cup lemon juice
  • 3/4 cup light brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons cold salted butter
  • 4 tablespoons cornstarch

Baking the Pie:

  1. Chill water and alcohol, then pulse with flour and butter in a food processor. Form dough into discs and refrigerate.
  2. Simmer apples with lemon juice and sugar. Cool, then strain, saving the juice for reduction.
  3. Roll out the crust, fill with spiced apples, and top with the crust or lattice. Chill the pie.
  4. Brush with egg wash, sprinkle with sugar, and bake until the crust is golden and the filling bubbles.
