These homemade pop tarts combine the convenience of store-bought pie crusts with a deliciously sweet cinnamon brown sugar filling, topped with a simple cinnamon glaze.
Ingredients:
For the Pop Tarts:
- 2 store-bought pie crusts
- 2 tbsp cinnamon
- ¾ cup brown sugar (light or dark)
- 1 tbsp cornstarch
- 2 tbsp unsalted butter, melted
For the Egg Wash:
- 1 large egg
- 1 tbsp milk
For the Cinnamon Glaze:
- 1½ cup powdered sugar
- 2 tbsp milk
- 1 tsp cinnamon
Instructions:
Preparing the Pop Tarts:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, unroll the pie crusts into rectangles, about 10 inches by 7 inches each.
- Place one pie crust on the prepared baking sheet.
- Brush the surface with melted butter using a pastry brush.
- Mix brown sugar, cornstarch, and cinnamon in a bowl, then sprinkle the mixture over the buttered crust, leaving a half-inch border.
- Top with the second pie crust, and press the edges to seal with a fork.
- Poke a few holes in the top crust with the fork.
- Whisk together the egg and milk to make the egg wash, and brush it over the top of the pie crust.
- Bake for 18-20 minutes or until golden brown.
Making the Glaze:
- While the pop tart bakes, prepare the glaze by mixing powdered sugar, milk, and cinnamon in a bowl until it's thick.
- Once the pop tart is slightly cooled, about 5 minutes, pour the glaze over the top.
- Allow the glaze to set for another 5 minutes.
Cut the giant pop tart into 6 squares and enjoy a homemade version of this classic treat, perfect for breakfast or as a sweet snack.
