Homemade Sesame Bagel (Simit)

  1. Ingredients:
    • 1.5 cups water
    • 1 tea cup vegetable oil
    • 2 eggs
    • 100g melted butter
    • ½ sachet instant yeast (or 1 tablespoon dry yeast)
    • 2 tablespoons sugar
    • 1 teaspoon salt
    • Flour as needed
    • For Coating:
      • 2 cups sesame seeds, toasted
      • 1 tea cup molasses mixed with 1 tea cup water

    • Mix water, sugar, and yeast. Cover with plastic wrap and let it activate for 10 minutes.
    • Create a well with 4 cups of flour. Add eggs, oil, melted butter, and salt.
    • Incorporate the activated yeast mixture and knead, adding more flour until the dough is soft and non-sticky.
    • Let the dough rest for 25 minutes.
    • Toast sesame seeds and set aside. Mix molasses with water.
    • Divide the dough into 12 equal parts, roll each into a 80 cm rope, twist and join the ends to form a ring.
    • Dip each ring first in the molasses water, then in the sesame seeds.
    • Place on a baking tray and let them rise in a 50°C (122°F) oven for 15 minutes.
    • Remove, preheat the oven to 180°C (356°F), and bake until golden brown.
