Equipment Needed
To make these delicious Snickers Ice Cream Bars, you will need the following equipment:
- High-speed blender
- 8x5 loaf pan
- Parchment paper
- Mixing bowls
- Spatula
- Knife
- Microwave-safe bowl or double boiler
Ingredients:
Ice Cream Layer:
- 3/4 cup + 2 tbsp (7oz) full fat canned coconut milk
- 1/4 cup natural peanut butter
- 2 tbsp raw honey or pure maple/agave syrup
- 1 tsp pure vanilla extract
- 1/4 tsp salt
Peanut Butter Caramel:
- 1/2 cup natural peanut butter
- 2 tbsp honey or pure maple/agave syrup
- 1/8 tsp salt
- 3 tbsp full fat canned coconut milk
- Peanuts (for topping the caramel)
Chocolate Coating:
- 6-9oz dark or semi-sweet chocolate (non-dairy and sugar-free)
- 1-2 tsp coconut oil (optional)
Instructions:
- Prepare the Ice Cream Layer:
- Add the coconut milk, peanut butter, honey or maple/agave syrup, vanilla extract, and salt to a high-speed blender. Blend until creamy and smooth.
- Pour the mixture into an 8x5 loaf pan lined with parchment paper. Place the pan in the freezer for several hours until firm.
- Prepare the Peanut Butter Caramel:
- In a mixing bowl, combine the peanut butter, honey or maple/agave syrup, salt, and coconut milk. Mix until smooth.
- Assemble the Bars:
- Once the ice cream layer is frozen, spread the peanut butter caramel evenly over it.
- Top with a generous amount of peanuts, gently pressing them into the caramel layer.
- Return the loaf pan to the freezer for several more hours until the caramel is set.
- Slice and Coat with Chocolate:
- Remove the frozen mixture from the freezer and slice into 8 bars.
- Melt the dark chocolate in a microwave-safe bowl or double boiler, adding coconut oil if desired for a smoother consistency.
- Coat each bar in the melted chocolate and place them back in the freezer until the chocolate has hardened.
- Serve:
- Once the chocolate has hardened, remove the bars from the freezer. Let them sit out for a few minutes before consuming to allow the ice cream layer to become creamier.
