Ingredients:

For the Brownie:

  • 200g butter
  • 160g dark chocolate
  • 4 eggs
  • 1 cup sugar (150g, minus two fingers)
  • 1.5 cups flour (170g)
  • 2 tbsp cocoa powder (30g)
  • 1 packet baking powder

For the Ganache:

  • 200ml cream
  • 160g dark chocolate

For the Coating:

  • 250g mixed dark and milk chocolate (can use only dark or milk chocolate)
  • 1 tbsp vegetable oil

Instructions:

  1. Melt butter and chocolate together. Beat eggs and sugar until pale, then add chocolate mix. Stir in dry ingredients on low speed.
  2. Pour into a large, rectangular baking dish lined with parchment paper. Bake at 160°C until a toothpick comes out clean.
  3. For the ganache, heat cream to just boiling, then add chopped chocolate. Chill until firm.
  4. Cut the brownie into intense-sized pieces. Hollow out the center and fill with ganache.
  5. Freeze for 45 minutes.
  6. Melt coating chocolate with oil. Dip brownies in and chill until set.
