  • ½ cup (115g) vegan butter, at room temperature (note 1)
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 2 tablespoons (30g) dairy-free milk, with more on hand (note 2)
  • 1 teaspoon vanilla extract
  • ¾ cup (190g) smooth peanut butter
  • 1 ⅓ cups (165g) all-purpose plain flour, or gluten-free all-purpose flour, spooned and leveled (note 3)
  • 1 teaspoon baking soda
  • Pinch of salt, to taste
  • 1 cup (170g) vegan chocolate chips, and/or chocolate chunks (plus extra for decorating)

Instructions:

Preparation:

  1. Preheat your oven to 180°C (350°F) and line 2-3 baking sheets with parchment paper.

Make the Vegan Peanut Butter Cookies:

  1. In a large bowl (if using a hand mixer) or the bowl of a stand mixer with the paddle attachment, combine the vegan butter, granulated sugar, brown sugar, dairy-free milk, and vanilla. Beat until the mixture becomes light, fluffy, and some of the sugar has dissolved.
  2. Add the peanut butter and beat until well incorporated.
  3. Incorporate the all-purpose flour, baking soda, and salt until just combined. Stir in the vegan chocolate chips to evenly distribute. The cookie dough should be soft and slightly tacky but not overly sticky. Note that the dough's consistency depends on the peanut butter and vegan butter used.

  2. Place the cookie dough balls on the prepared baking sheets, leaving about 5 cm (2 inches) of space between each. Slightly flatten all the balls using your fingers or the back of a glass. If desired, press additional chocolate chips or chunks onto the surface of each cookie.
  3. Bake the cookies in the preheated oven for approximately 13-16 minutes, until the edges turn slightly golden brown. For softer cookies, reduce baking time; for crunchier cookies, extend it.
  4. Allow the cookies to cool on the baking trays for at least 20-30 minutes; they will firm up as they cool. Transfer the cookies to a cooling rack to cool completely, and if desired, sprinkle them with flaky sea salt.
