Ingredients:

For the Crust:

  • 250g Flour
  • 80g Sugar
  • 2 tbsp Cornstarch
  • 150g Butter

For the Filling:

  • 200g Sugar
  • 2 tbsp Flour
  • 3 Eggs
  • 100ml Milk
  • 100ml Lemon Juice
  • 100ml Lime Juice
  • Lemon Zest
  • 1 packet Vanilla Sugar

  1. Prepare the Crust:
    • Cream butter and sugar together. Add flour and cornstarch, and knead well. Chill in the refrigerator for an hour.
  2. Make the Filling:
    • Whisk eggs and sugar together. Gradually add flour, vanilla sugar, milk, lemon and lime juice, and lemon zest.
  3. Bake the Crust:
    • Preheat the oven to 180°C. Press the dough into a lined baking pan and bake for 10 minutes.
  4. Add Filling and Bake:
    • Pour the filling over the partially baked crust and return to the oven for another 20 minutes.
  5. Cool and Serve:
    • Let the bars cool to room temperature, then chill in the refrigerator. Optionally, dust with powdered sugar before serving.
