Lemonies: Lemon Blondies Recipe

Base:

  • 215g unsalted butter, softened
  • 180g granulated sugar
  • 1 large egg + 1 egg yolk
  • 60ml fresh lemon juice (about 1.5 lemons)
  • 300g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Zest from 1 lemon

Glaze:

  • 250g icing sugar
  • 5-6 tbsp lemon juice

Instructions:

  1. Cream butter and sugar, then mix in egg, yolk, and lemon juice.
  2. Blend in flour, baking powder, salt, and lemon zest.
  3. Spread the batter in an 8x8” tin lined with parchment paper.
  4. Bake at 150°C (fan) for 30-35 minutes. Let cool in the tin.
  5. Mix icing sugar and lemon juice for the glaze. Spread over cooled lemonies.
  6. Slice and serve.
