- ½ teaspoon sea salt
- 100g (1 cup) pecans, chopped (optional, plus more for garnish)
For the Glaze (Optional):
- 160g (1 ⅓ cups) powdered sugar
- 3-4 tablespoons soy milk
Instructions
- Start by roasting the sweet potatoes wrapped in foil at 220°C (430°F) until soft, then cool and purée with vegan yogurt and vanilla extract.
- Preheat the oven to 175°C (350°F). Prepare a loaf pan with oil and parchment paper.
- Create vegan buttermilk with soy milk and vinegar. Set aside for 10 minutes.
