  • 1¼ tsp baking soda / bi-carb
  • ½ tsp salt
  • 60g Dutch process cocoa powder, sifted
  • 1 tbsp instant coffee granules/powder (optional)
  • 185ml hot full-fat milk
  • 125ml canola or other neutral oil
  • 200g packed brown sugar
  • 1 tsp vanilla extract
  • 200g sour cream or thick plain yogurt
  • 1 large egg (55-60g / 2oz)
  • 300g dark chocolate chips (semi-sweet)

Instructions:

  1. Preheat oven to 210°C / 410°F (190°C fan). Line a muffin tin with paper cases.
  2. Sift flour, baking soda, and salt together.
