    • 400 g of powdered sugar
    • 150 g of honey
    • 100 ml of water
    • 2 egg whites
    • 300 g of almonds
    • 100 g of pistachios

    1. Blanch almonds in boiling water for 5 minutes, peel, and then roast in an oven at 170°C for 12 minutes.
    2. Line a 25×12 cm mold with parchment and lightly grease with vegetable oil.

    4. In a saucepan, mix powdered sugar, honey, and water. Heat until the syrup reaches 110°C, then start beating the egg whites at medium speed. When the syrup hits 138°C, remove from heat and slowly pour into the beating egg whites. Add the orange zest and continue beating until the mixture becomes matte.
    5. Fold in the nuts and raspberries, pour into the prepared mold, evenly distribute, and refrigerate for several hours.
