Marbled Cheesecake Brownies

Ingredients

  • 1 package (250g) cream cheese, softened
  • ⅓ cup (65g) granulated sugar
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 large egg, room temperature

For the Brownie Batter:

  • 5 oz (142g) bittersweet chocolate (70% cocoa), coarsely chopped
  • 6 tablespoons (84g) unsalted butter
  • 2 large eggs, room temperature
  • ¾ cup (150g) granulated sugar
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • ½ cup (50g) all-purpose flour
  • 1 tablespoon (6g) cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x9-inch or 8x8-inch baking pan with parchment paper.
  2. For the cheesecake batter, beat the cream cheese until smooth. Mix in sugar and vanilla, then the egg until well incorporated. Set aside.
  3. For the brownie batter, melt the chocolate and butter together until smooth. In a large bowl, whisk together eggs, sugar, and salt until thick; then mix in the melted chocolate.
  4. Fold in sifted flour and cocoa powder. Reserve ⅓ cup of brownie batter, and spread the rest into the prepared pan.
  5. Pour the cheesecake batter over the brownie layer, then add dollops of the reserved brownie batter. Swirl with a knife to create a marbled pattern.
  6. Bake for 10 minutes at 350°F, then reduce heat to 325°F and bake for an additional 18-20 minutes. If using an 8x8-inch pan, bake for an additional 3-5 minutes.
  7. Cool completely in the pan on a wire rack, then refrigerate for at least 1 hour before slicing.
