Matcha & White Chocolate Crepe Roll

Ingredients:

For the Ganache:

  • 100g white chocolate
  • 10g matcha powder
  • 100g whipping cream

For the Crepes:

  • 100g cake flour
  • 10g matcha powder
  • 300g milk
  • 20g sugar
  • 20g butter
  • 2 eggs

For the Cream Filling:

  • 100g prepared ganache
  • 200g whipping cream
  • 20g sugar

For the Topping:

  • 3g matcha powder
  • 100g white chocolate
  • 30g coconut oil
  • 35g peanuts

Instructions:

  1. Prepare the Ganache: a. Gently heat the white chocolate and matcha powder over a double boiler or in a heatproof bowl over simmering water until the chocolate melts. b. Once melted, incorporate the whipping cream and blend well. c. Place the mixture in the refrigerator to set for about an hour.
  2. Make the Crepes: a. In a mixing bowl, combine the crepe ingredients: cake flour, matcha powder, milk, sugar, butter, and eggs. Mix until well combined. b. Sieve the mixture for a smoother batter. c. Preheat a non-stick pan on low heat. Pour a scoop of the batter, ensuring a thin, flat crepe. d. Cook until bubbles appear on the surface, then remove the crepe and let it cool on a wire rack. Repeat with the remaining batter.
  3. Prepare the Cream Filling: a. In a mixing bowl, take 100g of the prepared ganache and combine it with the whipping cream and sugar. b. Whip the mixture until it reaches a yogurt-like consistency. c. Transfer the cream filling to a piping bag.
  4. Assemble the Crepe Roll: a. Lay out a crepe on a flat surface. Evenly pipe a layer of the cream filling over the crepe. b. Place another crepe on top and repeat with the cream filling. Continue this layering process. c. Once all crepes and cream filling are used, gently roll up the layered crepes to form a log. d. Refrigerate the roll for about 30 minutes to set.
  5. Prepare the Topping: a. Combine the topping ingredients: matcha powder, white chocolate, coconut oil, and peanuts in a heatproof bowl. b. Gently melt the mixture over a double boiler or in warm water, ensuring a smooth consistency. c. Drizzle the topping over the chilled crepe roll.
  6. Final Steps: a. Place the crepe roll back in the refrigerator to let the topping set. b. Once set, slice and serve your delightful Matcha & White Chocolate Crepe Roll!
