Cookie Dough:
- 125 g softened Butter or Margarine
- 1 Egg
- Just under 1 cup Powdered Sugar
- 1 cup Cornstarch
- 1 tea glass Vegetable Oil (glass size: 200 ml)
- 1 packet Vanilla Sugar
- 3.5-4 cups Flour
For the Caramel:
- 9 tablespoons Sugar
- 200 ml Cream
- 1 teaspoon Vinegar
Additional:
- 1 bowl of roasted, unsalted Peanuts
- 250 g Chocolate, melted using a bain-marie
Preparation:
- Caramel: First, prepare the caramel sauce. Melt sugar in a pan until it turns caramel color. Carefully add hot cream and vinegar, stirring until sugar dissolves. Set aside to cool slightly before using with cookies.
- Cookie Dough: Mix all ingredients except flour in a bowl until creamy. Gradually add flour to form a soft, non-sticky dough. Roll out the dough between two sheets of parchment paper. Cut out cookies using a cookie cutter and place on a baking sheet. Bake in a preheated oven at 180°C until lightly golden. Let cool.
- Assembly: Dip each cookie in the warm caramel, then into the peanuts. Allow the caramel to set a bit. Then, dip the cookies into the melted chocolate and let them cool in a cold place.
- Optional: Drizzle with melted dark chocolate for decoration. You can also freeze the baked cookies without toppings for later use.
