Mini Chocolate Raspberry Tartlets

For the Pâte Sucrée Dough:

  • 78g Unsalted Butter, cold and cubed
  • 55g Powdered Sugar
  • 48g Plain Yogurt or Sour Cream
  • 175g All-Purpose Flour
  • 20g Almond Flour (or substitute with Graham cracker crumbs for a twist)
  • 1/8 tsp Salt
  • 1/4 tsp Vanilla Extract

For the Chocolate Ganache:

  • 125g 55% Chocolate or Semi-Sweet Chocolate, chopped
  • 100g Heavy Cream
  • 20g Unsalted Butter, softened

Assembly Ingredients:

  • Raspberry Jam

Directions:

Preparing the Pâte Sucrée:

  1. Whisk together all dry ingredients in a large bowl, setting aside the butter and yogurt (or sour cream).
  2. Using a pastry cutter, food processor, or paddle attachment on a mixer, cut in the cold butter and yogurt until the mixture forms a soft dough. If the dough is crumbly, knead gently by hand for a minute or two.
  3. Roll the dough between two sheets of baking paper to a thickness of 1/8 inch. Chill overnight in the refrigerator.
  4. Prepare your tart rings by greasing with butter. Cut out dough discs larger than the rings and line the greased rings with the dough. Chill for 1 hour.
  5. Preheat the oven to 325°F (163°C). Dock the base of the tart shells with a fork, then blind bake for 10-12 minutes until just starting to color. Allow to cool completely before filling.

Making the Chocolate Ganache:

  1. Heat the cream until it simmers, then pour over the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth.
  2. Mix in the softened butter until fully incorporated. If needed, use a hand blender for an extra smooth texture. Allow the ganache to cool for 10-15 minutes.

Assembling the Tartlets:

  1. Spoon 2 teaspoons of raspberry jam into the base of each cooled tart shell.
  2. Fill the rest of the tart shell with the slightly cooled ganache, using a piping bag or spoon, to give a glossy, smooth finish.
  3. Let the ganache set for 4-5 hours at room temperature to achieve the perfect consistency.
