No-Added Sugar Strawberry Chocolate Cups

Ingredients:

  • 1 cup Lily’s Semisweet Chocolate Baking Chips
  • 1 cup Lily’s White Chocolate Baking Chips
  • 2 Tablespoons coconut oil, divided
  • ½ cup freeze-dried strawberry powder
  • 2-4 Tablespoons heavy cream

Optional:

  • Freeze-dried strawberry pieces for garnish

Instructions:

  1. Prep Your Semisweet Chocolate: In a microwave-safe bowl, combine the Lily’s Semisweet Chocolate Baking Chips with 1 tablespoon of coconut oil. Microwave on a 50% power level for 1 minute. Stop, stir well, and then microwave again on 50% power, stirring every 20 seconds until the chocolate is fully melted. Once done, set aside.
  2. Prep Your White Chocolate: Repeat the first step but with the Lily’s White Chocolate Baking Chips and the remaining coconut oil.
  3. Prepare Strawberry Filling: In a separate bowl, blend the freeze-dried strawberry powder with heavy cream to create a creamy strawberry filling.
  4. Prep Your Muffin Tin: Line a mini muffin tin with paper liners. Now, pour about 2 teaspoons of the melted semisweet chocolate (or white chocolate) into each liner.
  5. Add Strawberry Filling: Gently tilt each liner to ensure the sides are coated with chocolate. Scoop about 1 teaspoon of the strawberry filling into the center of the chocolate in the liner. Gently press the filling down.
  6. Seal The Deal: Cover the strawberry filling with another layer of melted chocolate, ensuring the filling is fully enclosed.
