No-Bake Cocoa Brownie Batter

Ingredients:

  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 cups heat-treated all-purpose flour*
  • 1/4 teaspoon sea salt (adjust according to preference)
  • 1/2 cup unsalted butter (or vegan alternative), at room temperature**
  • 1/4 cup granulated sugar (adjust to taste)
  • 3/4 cups light brown sugar
  • 2 teaspoons vanilla extract
  • 4-6 tablespoons whole milk (or vegan alternative)
  • 1/2 cup semisweet chocolate chips (or vegan alternative, optional)

Instructions:

  1. Preparing the Flour: Microwave flour in a safe bowl for intervals of 30 seconds, stirring between each, until it reaches 165°F when checked with a thermometer. As an alternate method, spread the flour on a baking tray and bake at 350°F for 5 minutes. Allow to cool slightly after treatment.
  2. Melt butter, either in the microwave or over the stove. Transfer the melted butter into a large mixing bowl, and blend with the sugars and vanilla extract.
  3. Gradually fold in the treated flour, cocoa powder, and salt. Begin by adding 1/4 cup of milk, and if needed, incorporate an additional tablespoon of milk to attain the desired batter consistency.
  4. Optionally, integrate the chocolate chips or any other desired mix-ins. Relish immediately!

Notes:

  • Butter: If opting for salted butter, there’s no need to add extra salt.
  • Flour: Heat treating flour helps eliminate potential bacteria. This step is optional but advised.
  • Using Boxed Mix: This batter can also be prepared using boxed brownie mix. Make sure to heat treat the mix similarly. Mix the treated brownie mix with melted butter, followed by the milk and chocolate chips.
  • Variations: Swap regular chocolate chips with white chocolate, butterscotch, peanut butter chips, or even finely chopped chocolate bars. Enhance with candy like M&Ms, Reese’s Pieces, or nuts and colorful sprinkles!
  • Storage: If there are leftovers, store the brownie batter in an airtight container in the fridge for up to 5 days. It can also be frozen for up to 3 months; let it thaw at room temperature before consuming.
