  • 1kg all-purpose flour
  • 700g water
  • 10g yeast
  • 25g salt
  • 350g drained olives
  • 300g walnuts
  • Olive oil as needed

Instructions:

  1. Prepare Sponge: Mix 750g flour with water and yeast until smooth. Cover and rest at room temperature for 10-12 hours (up to 16 hours).
  2. Make Dough: In a mixer, combine the sponge and remaining flour. Mix for 5-10 minutes, pausing occasionally. When the dough clings to the hook, slowly add salt and oil.
  3. Hand Kneading: If kneading by hand, moisten hands and knead the dough, resting every 10 minutes. The dough should become smoother.
  4. Add Filling: Fold in olives and walnuts, and shape the dough into a ball. Let it rise until doubled in size (about 1-1.5 hours).
  5. Shape Loaf: On a floured surface, shape a large loaf and place on parchment paper. Allow to rise for another 30 minutes.
  6. Bake: Preheat the oven to 220°C with a pot inside. Transfer the dough with parchment into the hot pot. Add a container of hot water in the oven's bottom. Cover and bake at 220°C for 35 minutes, then uncover and bake at 200°C for 30 more minutes.
