Oreo Fudge Brownies

Ingredients:

  • 200g Dark Chocolate (chips or callets)
  • 90g Butter (non-dairy or regular butter)
  • 250g Granulated Sugar
  • 120ml Milk (unsweetened almond milk or any milk of choice)
  • 160g All-Purpose Flour
  • 40g Cocoa Powder
  • 10g Corn Starch
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 50g Chocolate Chips
  • 9-12 Oreo Cookies

Instructions:

  1. Preparation: Preheat your oven to 340°F (170°C). Grease an 8×8-inch square baking tin and line it with parchment paper, leaving some overhang for easy removal.
  2. Melting Chocolate & Butter: In a heatproof bowl, combine dark chocolate and butter. Melt them together, either using a microwave in 20-second bursts, stirring in between, or over a double boiler.
  3. Sugar Syrup: In a small saucepan, combine granulated sugar and milk. Heat on low, stirring continuously until the sugar has completely dissolved. Let this mixture cool for 3-4 minutes.
  4. Brownie Batter: Pour the melted chocolate mixture into the sugar-milk mixture, mixing until smooth. In a separate bowl, sift together the all-purpose flour, cocoa powder, corn starch, baking powder, and salt. Gradually fold these dry ingredients into the wet mixture, ensuring a lump-free batter. Lastly, fold in the chocolate chips.
  5. Assembly: Pour the brownie batter into the prepared baking tin, spreading it out evenly. Gently press the Oreo cookies into the batter, arranging them in rows.
  6. Baking: Bake in the preheated oven for approximately 20 minutes or until the brownies have risen evenly and a toothpick inserted into the center (avoiding the Oreos) comes out with a few moist crumbs.
  7. Finishing Touches: Once out of the oven, sprinkle some more chocolate chips over the top. Allow the brownies to cool completely in the baking tin.
  8. Serving: Using the parchment paper overhang, lift the brownies out of the tin. Slice into squares using a warm knife for clean cuts.
