Peanut Butter Rice Krispies Balls

Ingredients:

  • 1 1/2 cups (400 g) no-stir creamy peanut butter (from a 16-ounce jar)
  • 1/2 cup (113 g or 1 stick) unsalted butter, room temperature
  • 3 cups (360 g) confectioner’s sugar
  • 2 cups (50 g) Rice Krispies
  • 2 cups (350 g) dark or semisweet chocolate chips (for dipping)
  • Optional: Sprinkles for decoration

Instructions:

  1. Preparation of Peanut Butter Mixture: Using a stand mixer with the paddle attachment, combine the peanut butter and butter until well-blended. Gradually add in the confectioner’s sugar, ensuring it’s well-incorporated. Lastly, fold in the Rice Krispies, ensuring they are evenly distributed without overmixing.
  2. Forming the Balls: Scoop out a tablespoon of the mixture and roll it between your hands to form 1-inch balls. Place these on a baking sheet that’s been lined with parchment or wax paper.
  3. Freezing: To ensure the balls retain their shape during the dipping process, pop them in the freezer for at least 15 minutes.
  4. Melting Chocolate: In a microwave-safe bowl, pour in the chocolate chips. Melt them by setting the microwave to 50% power level. Start with 1 minute, then stir. Continue to heat in 20-second increments at 50% power, making sure to stir between each session, until the chocolate is silky smooth.
  5. Dipping: Dip each chilled peanut butter ball into the melted chocolate, ensuring it’s fully coated. Use a fork to lift them out, letting any excess chocolate drip off. Return them to the lined baking sheet. If you're using sprinkles, sprinkle them on immediately after dipping each ball while the chocolate is still wet.
  6. Chilling and Storing: Once all the balls have been dipped, place the baking sheet in the refrigerator to let the chocolate set and firm up. Once set, you can transfer the balls to an airtight container. These can be stored in the fridge for a firmer bite or at room temperature for a softer texture.

Tip: For a decorative touch, consider drizzling some white or milk chocolate over the balls before chilling. It adds a touch of elegance and an extra layer of flavor!
