Pecan Blondie Swirls

These Pecan Blondie Swirls are a delightful treat, perfect for anyone with a sweet tooth. The recipe combines a buttery, crumbly dough with a rich, creamy blondie and pecan filling, creating a perfect balance of textures and flavors. The swirls are baked to a golden perfection, offering a satisfying crunch with every bite. Ingredients:

For the Dough:

  • 150 grams cold butter, cut into cubes
  • 300 grams flour (approx. 2 and 1/4 cups)
  • 150 grams powdered sugar (approx. 1 and 1/4 cups)
  • A pinch of salt
  • 2 egg yolks

For the Blondie Pecan Filling:

  • 300 grams blond chocolate
  • 150 grams natural pecans
  • 1/2 teaspoon salt

Preparation Method:

  1. Roasting Pecans:
    • Preheat the oven to 180°C (356°F). Place pecans on a baking sheet and roast for 12 minutes until nicely toasted. Remove and set aside for later use.
  2. Making the Dough:
    • In a mixer with a paddle attachment or a food processor, combine cold butter cubes, flour, powdered sugar, and a pinch of salt. Mix until the texture resembles coarse crumbs, like couscous.
    • Add egg yolks and mix again until the dough is uniform but not overworked.
    • Wrap the dough and chill in the refrigerator while preparing the filling.
  3. Preparing the Filling:
    • Melt the blond chocolate in the microwave using pulses. In a food processor, blend the roasted pecans, melted blond chocolate, and salt until smooth.
  4. Assembling:
    • Remove the dough from the refrigerator and divide it into two parts. Place each piece between two sheets of baking paper and roll out to a thickness of 2.5mm.
    • Spread a layer of the blondie filling over the dough and evenly distribute with a spatula.
    • Roll the dough into a long cylinder and freeze for about 45 minutes or until completely frozen (freezing before baking prevents cracks).
  5. Baking:
    • Preheat the oven to 170°C (338°F) on the convection setting.
    • Remove the rolls from the freezer, place them on baking paper, and bake for about 20 minutes or until the dough turns slightly golden.
    • Let cool completely outside the oven.
  6. Finishing Touches:
    • Dust with powdered sugar and slice into uniform pieces.
