Ingredients: Crust:

  • 100g pistachios or walnuts (1 cup)
  • 2 tablespoons melted butter (30g)
  • 60g powdered sugar (3 tablespoons)
  • 7-8 sheets of phyllo pastry

Cheesecake:

  • 400g cream cheese
  • 200ml heavy cream
  • ¾ cup sugar (135g)
  • 1 packet of vanilla
  • 2 tablespoons flour (25g)
  • 1 egg

Syrup:

  • ¾ cup water
  • ¾ cup sugar
  • 1-2 drops lemon juice

Instructions:

  1. Grease a 19cm pan with butter. Layer phyllo sheets, brushing each with butter and letting them overhang the pan. Trim excess.
  2. Prebake the crust at 200°C for 3-4 minutes until lightly browned.
  3. Mix pistachios with powdered sugar and melted butter, then spread over the prebaked crust.
  4. For the syrup, boil water and sugar, then simmer for 10 minutes. Add lemon juice and set aside.
  5. For the cheesecake, beat cream cheese and sugar. Add cream, flour, and vanilla, mixing well. Add the egg last.
  6. Pour the mixture over the pistachio layer and bake at 160°C until set (about 1 hour).
  7. Let the cheesecake cool in the oven, then chill in the refrigerator.
  8. Decorate with pistachios and syrup before serving.
