Plum Shortbread Bars

Ingredients:

  • Shortbread Base:
    • 125g unsalted butter, room temperature, cut into cubes
    • ¼ cup monkfruit blend or white sugar
    • 260g almond flour
    • 70g crispy quinoa
    • ⅓ cup oat milk (or any thick plant-based milk)
  • Topping:
    • 485g fresh plums, pitted and chopped
    • ½ cup chopped pecans
    • ¼ cup monkfruit blend or white sugar
    • 2 tbsp honey
    • 1 tbsp vanilla extract
    • 80g crispy quinoa

Instructions:

  1. Preheat oven to 190ºC. Line a rectangular baking dish with parchment paper.
  2. In a mixer, cream together butter and monkfruit blend until smooth. Add in almond flour and continue mixing. Manually stir in crispy quinoa and milk.
  3. Press the mixture into the prepared dish and bake for 15 minutes.
  4. In a separate bowl, combine plums, honey, monkfruit blend, vanilla, and crispy quinoa.
  5. After the shortbread has baked, spread the plum mixture over it and sprinkle with chopped pecans.
  6. Bake for another 45 minutes.
  7. Remove from oven, let cool, then transfer to a cutting board and slice into rectangular bars.
