  • 1 pack vanilla pudding powder (38 g)
  • 60 g sugar
  • 1 tsp cinnamon
  • 1 tbsp vanilla sugar
  • 4 small apples, peeled, cored, and sliced thinly
  • 30 g sliced almonds
  • 1 sheet of puff pastry
  • Melted butter, for brushing
  • Brown sugar, for sprinkling
  • Powdered sugar, for dusting

Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) and butter a tart pan with a removable base, or a 24 cm springform pan.
  2. Cook the Pudding: In a saucepan, whisk together the apple juice, vanilla pudding powder, 60 g of sugar, cinnamon, and vanilla sugar. Cook over medium heat, stirring continuously, until the mixture thickens into a pudding-like consistency. Alternatively, in a Thermomix, cook for 5 minutes at 90°C on reverse level 3. Remove from heat and let the pudding cool slightly.
  3. Prepare the Apples: Peel, core, and slice the apples thinly. Place them in a bowl and stir in the cooked pudding mixture along with the sliced almonds. Let the mixture cool completely.
  4. Prepare the Puff Pastry: Roll out the puff pastry and line the prepared tart pan with it, pressing the dough gently into the edges. Trim any excess dough and use the scraps to cut out about 5 thin strips of dough, each about 2 cm wide, for the lattice top. Prick the dough base several times with a fork.
