Pumpkin Pie Chocolate Truffles

Delight in the fusion of pumpkin pie and chocolate with these decadent truffles. The creamy pumpkin center wrapped in a lush chocolate coating creates an unforgettable treat perfect for autumn celebrations.

Ingredients:

  • 1/2 cup (4 ounces or 110 g) cream cheese, softened
  • 2 Tablespoons (15 g) confectioners’ sugar
  • 1/3 cup (80 g) pumpkin purée
  • 1 3/4 cups (175 g) graham cracker crumbs (equivalent to about 12 full sheet graham crackers)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1 2/3 cup (10 oz or 283 g) dark or white chocolate chips

Instructions:

  1. Creamy Mixture: Begin by combining cream cheese and confectioners’ sugar in a stand mixer until you achieve a creamy texture. Gradually introduce the pumpkin purée, continuing to beat until uniformly mixed. Proceed to add the graham cracker crumbs, pumpkin pie spice, and cinnamon, mixing on medium speed until the mixture is consistent and thick.
  2. Chill Time: Refrigerate the mixture for a minimum of 3 hours, though you can also let it sit for up to 24 hours if desired. In preparation for the next steps, line two sizeable baking sheets with parchment paper.
  3. Form Truffles: Once chilled, spoon out the dough in generous teaspoonfuls and shape them into 1-inch balls. Place these on the prepared baking sheets and allow them to chill in the refrigerator for another 30 minutes.
  4. Chocolate Prep: About 5 minutes before the truffles are due to come out of the refrigerator, begin melting the chocolate. Opt for the microwave at 50% power, using 30-second bursts. Let it sit briefly after melting to cool down a little.
  5. Dip & Decorate: Remove the truffles from the refrigerator and, one by one, dip them into the melted chocolate. Use a dipping tool and ensure you tap it lightly on the bowl’s edge to shake off any excess chocolate. Place each dipped truffle back on the baking sheet. For an added touch, sprinkle some crushed graham cracker crumbs atop each truffle while the chocolate is still wet.
  6. Setting: Place the truffles back in the refrigerator for the chocolate to set thoroughly. You can serve them once set, but they can also remain at room temperature for several hours without issue.
