Quick Apple Turnovers with Caramel Drizzle

Flaky and delicious, these turnovers can be crafted with either pie dough or puff pastry. Filled with a spiced apple mixture and adorned with a tempting caramel drizzle, they’re the epitome of autumn comfort.

Ingredients:

For the Apple Filling:

  • 190g Apples, peeled & chopped (half Gala, half Granny Smith)
  • 75g Light Brown Sugar
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Vanilla Extract
  • 20g Soft Butter
  • 1/2 tsp Cornstarch (dissolved in 2 tsp water)

For Assembly:

  • Pie dough or puff pastry dough
  • Caramel sauce (for drizzling)
  • Milk (for brushing)
  • Maple syrup (optional for brushing)
  • Turbinado sugar (for sprinkling)

Instructions:

  1. Apple Filling:
    • In a saucepan, combine the chopped apples, brown sugar, cinnamon, and vanilla extract. Cook over medium heat until apples are halfway tender.
    • Stir in the dissolved cornstarch and bring the mixture to a boil, allowing it to thicken slightly.
    • Remove from heat, mix in the butter until fully incorporated. Transfer to a heatproof container and allow it to cool to room temperature.
  2. Assembly:
    • Preheat your oven to the temperature recommended for your chosen dough (usually around 375°F/190°C).
    • On a lightly floured surface, roll out the pie or puff pastry dough to a 1/4-inch thickness. Maintain a rectangular shape.
    • Using a pizza cutter or knife, cut the dough into eight 3×4 inch rectangles.
    • Place half of the rectangles onto a parchment-lined baking tray.
    • Spoon the apple filling onto these rectangles, leaving a small border. Drizzle some caramel sauce over the filling.
    • Brush the borders with milk to help seal the turnovers. Cover each with another rectangle of dough, pressing down the edges to seal. Optionally, you can create lattice designs or patterns on the top pieces before placing them.
    • Brush the top of each turnover with a mix of milk and, if desired, a touch of maple syrup for added sweetness. Sprinkle with turbinado sugar.
    • Bake in the preheated oven for 15-17 minutes or until the turnovers are golden brown.
  3. Serve & Enjoy: Allow turnovers to cool slightly, then drizzle with additional caramel sauce if desired. Best enjoyed warm on a crisp autumn day. 🍂🍏🥐
