For the Brownies:

  • 170g unsalted butter, melted
  • 260g granulated sugar
  • 1 large egg + 1 egg yolk
  • 1 tsp vanilla extract
  • Red food coloring
  • 200g plain flour
  • 10g cocoa powder
  • 1/2 tsp lemon juice
  • 90g white chocolate chips

For the Cream Cheese Icing:

  • 115g butter, softened
  • 225g cream cheese
  • 1 tsp vanilla extract
  • 500g icing sugar

Instructions:

  1. Mix melted butter and sugar. Add egg, yolk, vanilla, and red food coloring.
  2. Blend in flour, cocoa powder, and lemon juice.
  3. Fold in white chocolate chips.
  4. Pour into an 8×8” tin and bake at 160°C (fan) for 27-32 minutes.
  5. For the icing, cream together butter, cream cheese, and vanilla. Gradually add icing sugar.
  6. Spread icing over cooled brownies.
