Ingredients:

Cake:

  • 170g Flour
  • 150g Sugar
  • 1 tbsp Cocoa Powder
  • A pinch of Salt
  • 1 packet of Baking Powder
  • 1/2 tsp Baking Soda
  • 2 Eggs
  • 120ml Sunflower Oil
  • 120ml Kefir (3.2% fat)
  • 1 tsp Red Food Coloring

Cream Cheese Frosting:

  • 300g Cream Cheese (Philadelphia)
  • 100g Butter
  • 100g Powdered Sugar
  • 1 packet of Vanilla Sugar

Instructions:

  1. Cake:
    • Sift all dry ingredients twice. Add kefir, oil, sugar, eggs, and food coloring to them. Whip the mixture on medium speed for at least 5 minutes.
    • Line a baking form with parchment paper, pour in the batter. Bake for about 30 minutes at 180°C (356°F), checking readiness with a wooden skewer.
  2. Cream Cheese Frosting:
    • Whip butter with powdered sugar and vanilla sugar until light and fluffy. Add cream cheese and continue whipping until smooth.
  3. Assembly:
    • Cool the cake thoroughly. If the top is domed, level it off, and slice the cake into 2 layers.
    • Apply a generous layer of cream cheese frosting between the layers and cover the cake all around with the frosting.
    • Decorate as desired. The author used pomegranate seeds and thyme sprigs for decoration.
