  2. Separate egg whites and yolks. Beat the whites to stiff peaks, gradually adding sugar. Lightly beat the yolks and fold into the whites. Sift in the flour and gently fold. Bake until golden and a skewer comes out clean (about 35 minutes). Let the sponge cool in a slightly open oven, then completely.
  3. For the apple filling, peel and dice the apples. Cook with a bit of water and lemon juice until soft and the juice evaporates. Remove from heat, add jelly, and mix until dissolved. Let it cool and thicken, then spread over the sponge.
  4. Whip the cream with stabilizer and powdered sugar until stiff. Spread over the apple layer.
