Instructions:
- Pie Crust Preparation: Mix flour and salt in a bowl. Cut in cold butter until pea-sized. Add ice water to form a shaggy dough. Knead briefly, divide, flatten into discs, and chill for 2 hours or overnight.
- Roll Out Bottom Crust: Roll one disc to ⅛ inch thick. Fit into a 10-inch pie dish, trim, leaving a 1-inch overhang.
- Pie Filling: Toss apples, cherries, sugar, cornstarch, cinnamon, and vanilla. Add to pie dish.
- Lattice Top: Roll out second dough disc. Cut strips and braid two for decoration. Weave a lattice top over the filling. Trim and crimp edges.
- Baking Prep: Preheat oven to 425°F. Brush lattice with egg wash and sprinkle with sugar.
- Bake: Place pie on a baking sheet. Bake at 425°F for 15 minutes, then reduce to 350°F and bake for 50-55 minutes until golden and bubbly.
