Ingredients:

For the Pie Crust:

  • 340 g all-purpose flour
  • 1 teaspoon salt
  • 230 g unsalted butter, cold and cubed
  • 140 g ice cold water

For the Pie Filling:

  • 4 tart apples, peeled, cored, and sliced (about 700g)
  • 300 g red cherries, pitted and halved
  • 50 g brown sugar
  • 20 g cornstarch
  • 1 tablespoon ground cinnamon
  • 2 teaspoons vanilla extract

For the Egg Wash:

  • 1 egg, beaten
  • 2 tablespoons sugar crystals or coarse sugar

Instructions:

  1. Pie Crust Preparation: Mix flour and salt in a bowl. Cut in cold butter until pea-sized. Add ice water to form a shaggy dough. Knead briefly, divide, flatten into discs, and chill for 2 hours or overnight.
  2. Roll Out Bottom Crust: Roll one disc to ⅛ inch thick. Fit into a 10-inch pie dish, trim, leaving a 1-inch overhang.
  3. Pie Filling: Toss apples, cherries, sugar, cornstarch, cinnamon, and vanilla. Add to pie dish.
  4. Lattice Top: Roll out second dough disc. Cut strips and braid two for decoration. Weave a lattice top over the filling. Trim and crimp edges.
  5. Baking Prep: Preheat oven to 425°F. Brush lattice with egg wash and sprinkle with sugar.
  6. Bake: Place pie on a baking sheet. Bake at 425°F for 15 minutes, then reduce to 350°F and bake for 50-55 minutes until golden and bubbly.
