Rustic Peach Galette

Ingredients (for a 22 cm diameter galette):

For the Dough:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tablespoons sugar
  • A pinch of salt
  • 1/2 cup (110 g) cold butter, cubed
  • 2 tablespoons cold creamy natural yogurt
  • 1 tablespoon ice water

For the Filling:

  • 1 1/2 to 2 medium-sized ripe peaches
  • 1-2 tablespoons ground almonds
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch

For the Edges:

  • Sliced blanched almonds

For Dusting:

  • Powdered sugar

Instructions:

  1. Start with the dough by mixing flour, sugar, and salt in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Add the yogurt and ice water, then knead briefly until it forms a smooth dough. Chill the dough wrapped in foil for an hour.
  2. Preheat your oven to 180°C (356°F) with the fan setting on.
  3. Slice the peaches thinly and mix with ground almonds and cornstarch.
  4. Roll out the dough on a floured surface and transfer it to a baking sheet lined with parchment paper.
  5. Sprinkle a bit of cornstarch and ground almonds over the dough. Arrange the peach slices on top, leaving a 4 cm border.
  6. Gently fold the edges of the dough over the peaches. Brush the crust with a bit of peach juice and garnish with almond slices.
  7. Sprinkle the sugar over the peaches.
  8. Bake for about 40-45 minutes until the galette is golden brown.
  9. Allow to cool slightly, then dust with powdered sugar before serving.
